Elaborate selection of small plots, selection of grapes, sorting by barrels ... winegrower Ginés Fernández Quiles in their vineyards in northern municipality Cacabelos, Bierzo winemaking center. This is a family winery, based on agriculture with only 13 hectares distributed over 60 small parcels which are a kind of horseshoe around the winery and planted with vines in traditional glass dating from the mid-twentieth century ( strains of up to 100 years).

Their vineyards transmit knowledge and culture more ancient: Pliny the Elder and Strabo, 2000 years ago, and made reference to Bierzo vineyard in his writings. Their tillage craft from the pruning to the harvest, the soil texture mostly French, with its high content of quartz, the pH from 4.8 to 6.2 and the level of organic matter less than 1.2 provide great wines quality, elegant, rich and above all different.

In the vineyard planting density is greater than 3800 strains / Ha in training cup with traditional cultivation techniques. The production strain is only 1-1.5 Kg

Wineries Gancedo not artificially stabilized cold, clarified with egg albumin, filters only slightly (7 microns) and used French oak barrels.

Ucedo Mencia is a limited production (2,000 bottles / year) of opaque cherry color. Aroma powerful varietal mineral, wet earth, wild black fruit, new oak, chocolate, fruit liqueur. Boca concentrated, fat, powerful, sweet tannins, spice, jam, very persistent.

It results from a selection of small plots 7-8 can each contribute something different so we can reach a larger body, structure and complexity. Marida superbly consistent with stews, meats, Iberian, hunting ...
