Better known as "Morcilla de León" and "Picos de Europa‘s caviar", this dark sausage has a homogeneous mass, it is not so dry, spread, with a compact and thin texture. In this black sausage you will not detect the bits of onion and fat of its composition. It‘s a complex flavour and aromas of some spices (garlic, paprika, oregano).
Jesus uses the old formula transmited for his parents. The main difference with another sausage is its creaminess, that comes from its high chopped. With a low salt and fat level, and a high quantity of indigenous onion of "Horcal" variety has a light taste. Besides it doesn‘t saturate and repeats on you.
