Caprice Val Paxariñas

White Wine 2013. Protected Denomination of Origin Bierzo. Godello / Doña Blanca.

Prepared by the winegrower Ginés Fernández in their vineyards from Quilos in northern municipality Cacabelos, Bierzo winemaking center. This is a family winery, based on agriculture with only 13 hectares distributed over 60 small parcels which are a kind of horseshoe around the winery and planted with vines in traditional glass dating from the mid-twentieth century ( strains of up to 100 years).

Shorter design and production of wine marked by softness and fragrance lines in the original labeling. Caprice fits a model where technology leads Oenological expression of fruit and Godello Doña Blanca and places the cellar of the family court, slow performance and limited production by its own vineyards.

Their tillage craft from the pruning to the harvest, the soil texture mostly French, with its high content of quartz, the pH from 4.8 to 6.2 and the level of organic matter less than 1.2 provide great wines quality, elegant, rich and above all different.

Val de Paxariñas "Capricho" is author of a white wine with low production (13,000 bottles / year) produced strains more than 16 years of Godello in espalier (75%) and strains with more than 55 years of Doña Blanca in glass traditional (25%). Selecting only 1.5 kg for each strain with cryogenic processing and stabilized cold cellar. It is a brilliant straw-colored wine.

Complex aroma of fresh fruit, pear, apple, citrus, mountain herbs, memories of hay and dry stone. In the mouth, first seen in the residual carbon from the fermentation. Then a wonderfully balanced acidity / alcohol, with a cool, oily, variety, balsamic, persistent tasty something different ...
