"Mule foot" Palacio

Milk / Sheep

From the stately town of Guzmanes Toral, dry leonés small town near the Camino de Santiago present this sublime cheese.

It is prepared for Cipriano from milk from his farm, in the special format "mule foot" indigenous to the area, with a consistency of soft paste, without compacting, filtering itself and with only two months of curing.

Leon style =

Its bark is a natural moldy mold of a wild white and gray. The cut is soft, creamy, oily texture and color ivory. Acid flavor dominates, with backgrounds that evoke a sour yeast bread and cake-like connotations of “Torta de Casar”.

A quirk of taste ideal for solo or as a dessert with jam, honey or mountain tapas with salted fish. Cooking allows many possibilities to be able to melt easily. For example, involving pasta, gratin washing vegetables or minced meat to the plate.

Referenced this year in the publication "Spain, the Land of 100 Cheeses New" from the prestigious cheese expert Enric Canut.
