First Prize in the cheese from the Picos de Europa for the years 2007 and 2008 in the category Gamoneu Valley.
Gamoneu Authentic. It´s a remote taste of sweetened ones and substitutes who sadly distorting the reality of the product and which are found in many supermarkets.
Prepared by Juanjo de Cangas de Onis, with a limited production (only 15 kg a day!). Has the particularity to the rest of the Valley Gamonedo that, after processing in the cheese, a bag is carried, one by one, the mountains of Covadonga, in talameras to sleep within a narrow natural cave near the lake Enol.
John is prepared with raw milk from cow and goat with natural rennet. The mass, once in the wooden mold-pressed “arniu” slightly, which is why the resulting paste is more compact than the Cabrales, for the same reason, the grain is also smaller and closer to the cortex. After the casting and is straining to pieces salt and smoked for 10 days with oak wood. Then refined in the caves until five months of maturation.
Moldy crust dry and hard, sienna color, sometimes red or orange touches. Pressed paste with slight bluish-green pigment produced by Penicillium and yellowish-white cut. Texture very special, somewhat grainy, but firm, friable melts cream. Primary aromas of smoke and hazelnut in harmony. Drying and slightly spicy flavor, with buttery regusto evolves persistent. Extraordinarily complex and rich, highly concentrated milk. Sensations to area shelters, herbs, with little acidity.
Ideal to enjoy alone or in tables of cheeses. Superior next to a village bread, honey, jams and preserves. In cooking, sauces with mushrooms, croquettes, asparagus, peppers filled with great ciders, wines and crianzas doomed.
