Cured Cheese Kefir

Pasteurized milk and Kefir de Vaca.

The tasting of this cheese is a surprise, especially about the mouth that shows elegance and minimum salt content.

The kefir is a fungus that feeds on milk and fermented ago, resulting in a kind of yogurt. Originates from the Caucasus, and today are given health benefits, protecting the digestive system and promote the balance of intestinal microflora, in addition to inhibiting the growth of harmful bacteria, so that benefits the digestion and enhances immune function.

Consistence moderately friable and brittle. Its flavor is clean, high purity, fresh, slightly acidic and slightly bitter, with some surprising nuances more like a deep goat cheese from cow. Has a unique and long aftertaste of yeast that invites them to continue eating.

Praderio Asturias

The artisan cheese factory located in Proaza in the municipality of Santo Adriano to 26 km. Oviedo, in the heart of the valleys of Trubia and "Senda del Oso." milk comes from cows using selected Friesian breed, native to the town of Cabo Peñas and Gozón, and is the morning milking.

The pieces are made by hand one by one and now have to produce 800 units per week.

Molding is performed manually after 48 hours and rigor cured hanging around 30 to 60 days during which a refinement and a truly remarkable development.

It has the shape typical pumpkin cheese molded cotton cloth.

Cheese Vallesdeloso kefir

Marriage: perfect with carbonated drinks like champagne, champagne, beer or cider natural, as well as fine wines and chamomile. Similarly breads with nuts, honey and preserved foods.

Taste as a dessert or cheese positioning tables at the end of the cow's milk.
