The Pearl was the one chosen cheeses as an appetizer at the wedding feast of the Princes of Asturias. It is simply amazing and is considered among the "100 best cheeses from Spain and for us in a very high position.
This is a family of dairy, located in the Asturian council of Illas and founded in 1923. Currently responsible José Luís and Esther as then developed, with traditional craftsmanship, this cheese from cow's milk with a small amount of cream sheep.
The fermentation period lasts a minimum of two months in the natural cave, located under the cheese itself, during which pampers cheese change its position to have a maturity and a uniform and adequate.
Semi-hard cheese with a soft cut pasta but firm and compact, but blind and galleries dotted lines in which there is a dark greenish-blue mold and white with touches of yellow straw.
In the mouth, melting with a stylish taste, intense, complex, long and persistent, with a contrast between sweet and nice touches funds saline. Overall impression paste. Aftertaste attenuating trend. Final nuts slightly acidic. When young, is a partly blue cheese, creamy, subtle flavor, delicate and with a large bouquet. Over the days, to complete his transformation into a blue cheese, acquiring all of his character, slightly spicy, deep, but without losing one iota smoothness and aroma.
In the accompanying table with marmalade, quince, dried fruit, honey. Reserve in the kitchen and delightful surprises that enhances every dish without keeping the flavor. Ideal for savory tarts, pizzas, sauces for meats, cod, salmon, mushrooms, salads ...
