Black sausage

The Matachana black pudding is the only sausage you eat your guts out, spread on bread.

This is one of the most typical Leon cuisine and one of the most prized in their immediate environment. The booming tourism Leon, Humid heat Quarter and the Camino de Santiago has become popular in other markets.

Also known as "Matachana" name comes from a former butcher who has been named the Leon black pudding of which is consumed elsewhere as Asturias. This is normally found in the letters of the cider houses and restaurants in the neighboring region Matachana black pudding, which is typical of Leon.
