- Cabrales DOP. Place of preparation: East Zone, in the Picos de Europe, council of any town of Cabrales and Peñamellera Alta. Type of milk: raw cow, ewe, goat, or mezca two or three types. Animal rennet. Aroma: intense, peculiar, typical of blue cheeses. Taste: Slightly spicy, slightly acidic, very buttery and with a persistent aftertaste.
