These awards are of great national significance. They are awarded every two years, and this past year was for the first time an international one. A total of 644 submitted to the contest and had been producing cheese from France, Belgium and Holland. The tasting panel was also composed of judges from several countries

Agrovaldes Cooperative of La Espina, in the heart of Asturias, in his afuega'l pitu spicy with milk from their own herd of cows and Friesian breed Asturiana de los Valles.

Cheese is a white to yellowish with Trends, depending on their degree of maturation. His cut is cleaner than other cheeses of this title. Its flavor is slightly acidic, with little or no salt, very creamy and quite dry. It is pasty but less astringent on the palate than other afuegalpitu. Its flavor is mild, characteristic and increases with maturation.

The Afuega'l pitu is a unique cheese in the world. In fact it is considered one of the oldest and traditional cheeses from Asturias which was being prepared in all the farmhouses for the simple process of spontaneous curd.

Covered by Protected Designation of Origin (PDO) has two main variants. The red variant is hierarchical once curd milk, mixing it with paprika and then passing it augers (molds) with ladle, serum filtering goes through the holes of the mold. The draining is slow, there is only pressed itself.

Are left in the molds 24 hours. After this time are passed to other smaller molds and pouring salt road salt over the surface of the cheese. Other past 24 hours are passed to the ripening chamber where about 30 days elapse before marketing.

Presentation: White hierarchical. Whole piece vacuum attractive cardboard box to help better preservation and maturation of this very special and delicate cheese.
